Creamy pasta perfect for kids lunch or great dinner served with some warm French bread !!
This has been my recipe for how long ... , I just can't remember !! Probably one of first kind of pasta that I learnt to make. Pasta is an Italian dish, finding its place in many a homes today. I live to make pasta with lots of veggies , equal to the amount of pasta. Traditional spicing is pepper and that I find really bland to my palates.So I grind red chillies or finely chop it . It elevates the pasta to a new level , trust me !! It might seem an odd ingredient in Italian dish but I find it perfectly fitting into the dynamics of the pasta. You can perfectly choose to ignore the chillies and add pepper instead.
Here I have used a thick tomato paste which just coats the pasta, but I have used thinner variety of the paste as well. Works just fine but will be more gravy compared to this. Also I have made use of milk to make the pasta creamier. I use cream instead of milk only during special occasions.The procedure remains the same just use cream instead of milk.
1 cup boiled penne * see notes
2 cloves of finely chopped garlic
1 green/red chili finely chopped
2 tablespoons tomato paste
1 cup red/ yellow bell peppers cubed
1/2 cup milk
3-4 basil leaves
Salt to taste
2 tablespoons oilive oil
1 teaspoon of Sugar
1 tablespoon slivered almonds /pine nuts
Note - To boil pasta , in a big pot add 3/4 of water , teaspoon of salt and a teaspoon of oil. Let the water boil.Add the pasta and cook until soft but not mushy. Drain the water and wash the pasta with cold water to arrest the cooking of the pasta. Drizzle a teaspoon of oil and coatbtge pasta well. Now it is ready to be used when you want. It will not stick to each other or dry out.
