Paneer Bhurji is a breakfast recipe popular in the north of India . It is a medley of cottage cheese aka paneer , sautéed with onions , tomatoes and spices garnished with coriander leaves. This is eaten as is or along with toasted bread. Since paneer is loaded with good amount of calcium and proteins , makes it an ideal breakfast. Kids who are fussy about food would tend to love this !

And it cannot get as easy as this , just takes about 15 mins for whipping up the paneer and stand time of about 1-2 hours. I prefer to make the paneer night before and stash it in the refrigerator to firm up really well. The paneer sitting in the refrigerator cuts up really well and is more stable to handle. How to make paneer from scratch

150 gms Paneer , crumbled
1 big Onion , chopped finely
1 Tomato,big chopped
1 teaspoon organic Turmeric
1 teaspoon Cumin Powder
1 teaspoon Mustard Seeds
1 teaspoon Red Chilli powder
2 tablespoons Fresh Coriander, chopped
salt to taste
