Never thought that making Paneer at home was this easy. Staying in cities probably spoils you. Everything is so easily available in the supermarkets and hence never found the necessity to make it at home. Now, living outside of India, getting Paneer is difficult. You really need to drive yourself up to the Indian stores and even there you will not find it fresh. After making Paneer at home (and given its simplicity) , I have no second thoughts on making it time and again :-)
1.5 liters Milk (have used 1.5% fat)
1 cup Curds/yoghurt (may require more ifvthe yoghurt is not sour)
Note : You can use lemon juice to curdle the milk. But, the texture of paneer will not be the same. If you are using lemon, then after collecting the paneer and tying it up , hold it under running water. This will remove the acidic taste.
Whey is a very good form of Protein. This highly nutritious by-product , is very good for vegetarians since our sources of Protein are very limited.
The left over whey can be used in different ways.
