winter spice cake {eggless}

The aroma of spices especially cinnamon is deliciously yummy and perfect for coffee mornings or chai evenings !!19A577B8-AAC2-4E08-9D80-7A0A56290714While I was browsing through some cookbooks in my son's school, I came across this book "Holiday Treats" by Esther Hautzig. And this recipe caught my instant attention for 2 reasons. First, the cake didn't call for eggs and secondly , it was made using whole wheat flour.It was a treat for me :-). I could not resist my temptation to try this at home !IngredientsServes 81 1/2 cups Whole Wheat Flour1 1/4th cup Powdered Sugar{the original recipe called for 1 cup . I felt it was less and so added another 1/4th cup. You can choose to continue with 1 cup of sugar}1 1/2 teaspoon baking soda1 1/2 teaspoon ground cinnamon1 teaspoon ground nutmeg1/2 teaspoon ground cloves6 tablespoon vegetable oil1 tablespoon white vinegar1 teaspoon vanilla1 cup cold waterMethod

  1. Preheat oven to 180 degrees
  2. Sift flour, sugar, baking soda, cinnamon, nutmeg and cloves directly into ungreased baking pan.
  3. Using teaspoon, make three holes in the mixture. Pour oil into one hole, vinegar into second hole and vanilla in to the third hole.
  4. Pour cold water over all the ingredients. Stir the mixture with fork until it is all blended.
  5. Bake for 35 minutes. Check using a knife. If the knife comes out clean , then the cake is done. Else give it a few more minutes.
  6. Cool the cake and then cut it into blocks.
  7. Dust the cake with powdered sugar and enjoy.
