Nippattu is a crunchy spicy biscuit which dots every bakery in Bangalore. A perfect accompaniment for a rainy day with a steaming cup of coffee !!
There is no traditional bakery in Bangalore that does not sell these awesome spicy nippattus :-) The best of the lot comes from the community of Iyengars whoes bakeries are famous all over Bangalore. Traditionally , these nippattus are baked using lot of hydrogenated fat , which now we consider a bad fat. Since lots of hydrogenated fat is used to make these , they almost taste like fried and the texture is very crisp. No doubt it tastes yummy and smells divine. So taking health into consideration and our taste buds as well, I baked these which almost tastes the same minus the hydrogenated fat :-D
These baked ones are equally crisp and need to baked to perfection. Else you will end up with an undercooked and chewy one or charred over baked one.Each oven is different and while baking you need to keep a check on it.
Makes about 25 medium ones
Mince together (do not grind but mince in a food processor or chop them finely)
